Steven pampered by his lovely assistants as he puzzled out how to cook the dish.
Steven finally caught sight of how Bella halved the eggs.
Steven yelped and just short of stamping his feet in dismay at seeing how the eggs were halved. (should be cut lengthwise)

The girls laughed at Bella's oops and Steven's dismay, while Steven was resigned to having his beautiful plate display spoiled.
These three truly seemed to have fun cooking for the show and got along pretty well.
The girls are so lucky to work with Steven who so conscientiously gave them ample screen time and dialogues.
To make his program special Steven includes these pointers in his show:
A) The proper usage of a word relating to cooking (truly the Orthography King)
1. epi 4 is the word bao = deep fry - people frequently misuse 爆 instead of the correct word 炮
Cooking tips
2. epi 4 to deep fry chicken wings extra crisp - do not wash defrosted wings under running water because the water will then be absorbed inside the meat. Instead, lay the defrosted wings on a towel and pat dry. The towel will absorb the moisture from the wings, thus making them crispier when fry.
3. epi (?) to retain the greenness of leafy veg, add a pinch of sugar to the water.

For the episode to be aired during the CNY week, the AP took the show to a walled village to join in the villagers' big outdoor CNY celebration feast. All were dressed appropriately in Tong costumes. Michelle Yim was the guest star.

Michelle Yim reveals that she calls Steven, Ma Zai, when on tv but off camera she calls him Ma Man Choi (馬文才- Scholar Ma).
"Why?" asked Bella. (Steven’s co-star in Apprentice Chef 1)
Michelle: "Because when we filmed Beyond the Realm of Conscience (BTROC) our dialogues were very lengthy, and some words we truly didn't know, some words we did not know their meaning either but he did. And he was so nice, especially came over from another studio. Wei! Any words need explaining. Yay, sifu's here, professor. All kinds of names. His surname is Ma so we called him Ma Man Hou (馬文豪- eminent writer Ma) And then later felt that he is so literary talented (才華) so called him Ma Man Choi (馬文才- Scholar Ma) instead. He would explain each and every word to us and even wrote down their pinyin for us."

TN: Urg! I dislike Steven's hairstyle with bangs!



Apprentice Chef 5 ratings for 2/17 garnered a high rating of 20 points.
only 4 points lower than the week's highest rating of 24 points for My Better Half @ prime time.
Of course, imo, the presence of Michelle Yim as guest star was a big draw to viewership. I've always like Michelle as an actress, after this show, my admiration for her professionalism went sky high especially since she was still in mourning for the passing of her late boyfriend.
Ratings for AC so far:
1/20 1st week 19 points highest rating ever for its particular time slot
1/27 2nd week 19 points
2/3 3rd week 18 points
2/10 4th week 17 points CNY week
2/17 5th week 20 points.

In Today VIP, Steven mentions that his monologue was supposed to wrap up each episode but during the take, he did not like the feel of it; that there he was giving his lengthy monologue while the girls just stood quietly beside him. He said one of the motives of the show is for the audience to see their growth in cooking skill. Also, since both girls are newbies, Steven wants the audience to get to know them better, so at the very last minute before the actual take, he changed his monologue script to include scripted lines for them. Bella expressed her appreciation for Steven's magnanimity and Steven in turn praises them for being quick learners and serious workers. It is just like Steven to be considerate of others making sure he treats his young assistants as part of the team instead of just being pretty vases. Beside being newbies, both girls have no experience in cooking whatsoever, in fact, in one of the episodes, one of them unknowingly held the blade of the knife instead of its handle. They are truly very lucky to start their tvb careers with Steven who is willing to help them grow.
Also Steven jests that Bella at 17 years old is so young he could actually be old enough to have fathered her. lol! When Bella was asked about working with Steven, she enunciates slowly: Steven is very serious at work. He is into everything, not just concerns with his part but also over the whole production. He made sure everything is well coordinated for the big picture. In fact, It is his suggestion that we should coordinate our wardrobe.
Steven: They are young so they can dress more in more brightly and rich colors clothes.

I like the format too.
It always begins with a theme of connecting to the general public
~~~~~1st ep -- capturing the moment
~~~~~2nd ep.-- persistence in work
during the sit down meal he will alternately promote his guest star and guest chef
& concludes with Steven graciously putting the last limelight on his guest chef by connecting the theme to his guest.
Steven connecting with the general public. Judging from their big smiles on their faces, Steven's sudden appearance brought them much laughter.
Steven asks her (in red) how it felt to mix the prawns with the seasoning, she says it felt yucky. (nan sau) Steven gently admonishes her and says "we're going to eat this later, so we must season it with love."

Steven ingeniously blending his passions, namely: photography and cooking, to work for him. Bravo!
A photographer is like a chef
photographer captures the expressions and impressions of his subjects of the moment.
a moment chefs most wish to capture
it's also the goal most chefs strive for
introducing his female assistants (they called themselves Steven's assistants)
to get rid of the fishy taste
If stick to knife while sliced, then this abalone is of the best kind
That's how a master chef grows...(by continually moving forward)
